Ingredients:
Three cups of cooked pasta
One cup of blanched green beans
Two bell peppers, any color
Half a can of pinto beans
One can of tuna
One cup of celery
Six green onions
Ingredients for the Dressing:
One tablespoon of mustard
Three tablespoons of mayonnaise
Two tablespoons of olive oil
Two tablespoons of lemon juice
Two tablespoons of chopped fresh mint
Salt and black pepper, to taste
Instructions:
Cook the pasta as usual and drain well.
Dice the bell peppers, celery, and green onions. Combine them with the pasta in a large bowl.
Add the blanched green beans, pinto beans, and tuna. Mix everything together gently.
To prepare the dressing:
Chop the fresh mint finely.
In a small bowl, combine the chopped mint, mustard, mayonnaise, olive oil, lemon juice, salt, and black pepper. Stir until smooth.
Pour the dressing over the salad and toss well to coat all the ingredients.
