It’s hard to say exactly when our ancestors started cooking, but phylogenetic analysis suggests that our ancestors probably invented cooking between 1.8 and 2.3 million years ago. The word barbecue comes from the language of a Caribbean Indian tribe called the Taino. They would grill meat on a raised wooden grate called a barbacoa. We know that the word dates back to at least 1526 AD, from a written account by a Spanish explorer of the West Indies. Of course, it was around long before that, but no one wrote it down.

Grilling is perhaps the oldest cooking method that is still popular among people today. In early times, people used this method as a way to preserve food. Over time, humans began experimenting with this method to make it better. With the intention of cooking delicious food, the marinating process came on the scene. This is when barbecue sauce was invented to add more flavor to foods like meat, fish, poultry, etc. According to information recorded at the Tennessee State Museum, in the 1500s, European explorers saw the Native Americans of the Southeast grilling meat on wooden planks over a fire. When the Europeans returned home, they began cooking pork this way. Although grilling was common in the American colonies for several hundred years before the 17th century, it is believed that barbecue sauce originated during this period. This estimate is reinforced by the fact that several French and English accounts from that period and even centuries later mention the use of barbecue sauce for cooking.

Vinegar was then introduced as an ingredient in barbecue sauce in the late 18th century. Several cookbooks from this period highlight the use of vinegar along with salt, pepper, and mustard. Barbecue sauce recipes were further refined in the 19th century with more innovative ways to flavor the sauce. By the beginning of the 20th century, a wide range of commercial barbecue sauces were introduced to the market. The Georgia Barbecue Sauce Company, based in Atlanta, was the first company to commercialize barbecue sauce in 1909. The business idea was a huge success. It was during the 1920s that ketchup, sugar, and Worcestershire sauce made their way to the market. In 1940, Heinz was the first company to sell barbecue sauce in bottles. In the second half of the century, more companies entered the market, introducing barbecue sauce in a variety of flavors.
